Shrimp and Mushroom Alfredo

Shrimp and Mushroom Alfredo

Ingredients
• 1 – 2 lbs. peeled and deveined shrimp (21-25)
• 8 oz. fresh sliced mushrooms (any kind will do)
• 1/2 cup unsalted butter
• 2 garlic cloves, minced
• 2 cups heavy cream
• 1/4 teaspoon white pepper (use black pepper if you don’t have white)
• 1/2 cup grated parmesan cheese
• 3/4 cup mozzarella cheese (optional, add more parmesan if you leave this out)
• 1 (12 ounce) box angel hair pasta
• 1/4 cup chopped fresh parsley (optional)

Directions
1. Melt butter in medium saucepan over medium/low heat.
2. Add the garlic, add shrimp and cook for about 1 minute on each side ( do not overcook they will finish off in the sauce)
3. Add mushrooms and cook for a couple more minutes.
4. Add cream, white pepper and bring mixture to a simmer.
5. Stir often. Remember low heat, you don’t want to scorch the butter or cream.
6. Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
7. When sauce has thickened, add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
8. While the sauce cooks, boil noodles for 3-5 minutes.
9. Stir in the freshly chopped parsley
10. Place pasta on serving plates and spoon sauce over pasta.

For the basic Alfredo sauce, leave out the shrimp and mushrooms and add whatever you’d like!!!

Here's One Alternative to the Energy Crisis

So, this is an actual (tongue in cheek) theory. It's called the "Buttered Cat Paradox". Everyone knows cats ALWAYS land on their feet. Everyone knows that when you drop toast the buttered side ALWAYS hits the floor.

What if you were to strap a piece of toast to the back of a cat? In theory this would cause perpetual motion. The cat would hover, then eventually spin because of the opposing forces of the buttered toast to the cat's feet. (Click on the picture to see this effect)

If you get enough buttered cats and hook them up to turbines, you could in theory create energy. And that's my alternative to the energy crisis...LOL...Enjoy!!!
You can look at Wikipedia for more information on this theory.

Near Perfect Fresh Salsa Recipe

I think I've actually found my near perfect fresh salsa recipe.

It will be on the Stretch Your Food Dollar site as well since I only paid $3 for the tomatoes and $1 for the onion and garlic. I grow my own Peppers and Basil. The rest I had in the cupboard, It makes about a quart or more.

2 lbs. Plum Tomatoes
4-6 Fresh Jalapenos
4-5 Medium Sized cloves of Garlic
1 Medium sized Red Onion
5-6 Fresh Basil leaves (I don't happen to like cilantro, but use it if you like it)
A couple dashes of Olive Oil
Pepper and Ground Cumin Seed to taste

Dice and salt tomatoes and let them sit in a colander to drain the water from the tomatoes (I usually let them sit for half an hour minimum). Do the tomatoes first so they can sit while you are chopping the other ingredients. Mix the tomatoes up once in a while to drain them good.

Dice the jalapenos and the onion, smash the garlic and tear or chop the basil leaves...as I am chopping I am just throwing everything on top of the draining tomatoes., mixing it up every once in a while.

Put the mix in the food processor, I just pulse it down because I like it chunky...Add a couple of dashes of olive oil while it's in the food processor. Don't worry if everything fits in the food processor in one batch, it'll all mix together in the container.

Put in the fridge (after tasting of course) for at least a couple hours, usually better if left to sit overnight.

Let me know who made it and what you think!!! I made it today and it came out great, I can't wait to taste it tomorrow.
