Near Perfect Fresh Salsa Recipe


I think I've actually found my near perfect fresh salsa recipe.

It will be on the Stretch Your Food Dollar site as well since I only paid $3 for the tomatoes and $1 for the onion and garlic. I grow my own Peppers and Basil. The rest I had in the cupboard, It makes about a quart or more.

2 lbs. Plum Tomatoes
4-6 Fresh Jalapenos
4-5 Medium Sized cloves of Garlic
1 Medium sized Red Onion
5-6 Fresh Basil leaves (I don't happen to like cilantro, but use it if you like it)
A couple dashes of Olive Oil
Pepper and Ground Cumin Seed to taste

Dice and salt tomatoes and let them sit in a colander to drain the water from the tomatoes (I usually let them sit for half an hour minimum). Do the tomatoes first so they can sit while you are chopping the other ingredients. Mix the tomatoes up once in a while to drain them good.

Dice the jalapenos and the onion, smash the garlic and tear or chop the basil leaves...as I am chopping I am just throwing everything on top of the draining tomatoes., mixing it up every once in a while.

Put the mix in the food processor, I just pulse it down because I like it chunky...Add a couple of dashes of olive oil while it's in the food processor. Don't worry if everything fits in the food processor in one batch, it'll all mix together in the container.

Put in the fridge (after tasting of course) for at least a couple hours, usually better if left to sit overnight.

  4. I love the idea of using basil instead of cilantro. Personally, I like cilantro, but I imagine that using basil gives the salsa a whole new fresh spin. Thanks for the great idea!

  5. Very good...just made a batch. Never had cumin in salsa before but have had in lots of other Mexican dishes. It turned out very good. I'd use this recipe again.

  6. I just "Googled" fresh salsa recipes and your blog was listed. This sounds like the best so far and I'm trying it tomorrow! I love Cilantro, but Hubs thinks it's too 'sweet' tasting so I like the idea of Basil and will make a batch with that and one with Cilantro. From all the recipes I have read, I am thinking that your technique (such as salting and draining the tomatoes) will make a big difference! Thanks for posting!
