Shrimp and Mushroom Alfredo

Shrimp and Mushroom Alfredo

Ingredients
• 1 – 2 lbs. peeled and deveined shrimp (21-25)
• 8 oz. fresh sliced mushrooms (any kind will do)
• 1/2 cup unsalted butter
• 2 garlic cloves, minced
• 2 cups heavy cream
• 1/4 teaspoon white pepper (use black pepper if you don’t have white)
• 1/2 cup grated parmesan cheese
• 3/4 cup mozzarella cheese (optional, add more parmesan if you leave this out)
• 1 (12 ounce) box angel hair pasta
• 1/4 cup chopped fresh parsley (optional)

Directions
1. Melt butter in medium saucepan over medium/low heat.
2. Add the garlic, add shrimp and cook for about 1 minute on each side ( do not overcook they will finish off in the sauce)
3. Add mushrooms and cook for a couple more minutes.
4. Add cream, white pepper and bring mixture to a simmer.
5. Stir often. Remember low heat, you don’t want to scorch the butter or cream.
6. Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
7. When sauce has thickened, add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
8. While the sauce cooks, boil noodles for 3-5 minutes.
9. Stir in the freshly chopped parsley
10. Place pasta on serving plates and spoon sauce over pasta.

For the basic Alfredo sauce, leave out the shrimp and mushrooms and add whatever you’d like!!!
